Lemon Rice

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 cup chicken broth
  • 1 cup water
  • 1 cup long grain rice
  • 2 -3 tablespoons lemon juice
  • 2 tablespoons parsley, chopped

Recipe

  • 1 combine broth and water in a saucepan over medium-high heat. stir in rice and pepper to taste and bring to a boil. immediately reduce heat to low. cover and simmer 20 minutes or until rice is tender and liquid is absorbed. remove from heat and let sit 5 minutes, covered. sprinkle with lemon juice and parsley and fluff with a fork.
