Lower Fat Cold Sesame Noodles

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 16
  • 2 lbs whole wheat pasta
  • 2 cups cucumbers (cut into matchsticks)
  • 2 cups carrots (matchsticks)
  • 2 cups snow peas (matchsticks)
  • 1 cup scallion (chopped)
  • 1/4 cup peanut butter
  • 1/4 cup tahini
  • 2 tablespoons sesame oil
  • 1/2 cup water
  • 1 teaspoon soy sauce
  • 2 tablespoons rice vinegar
  • ginger

Recipe

  • 1 1. cook noodles. drain.
  • 2 2. chop veggies.
  • 3 3. assemble sauce ingredients.
  • 4 4. toss noodles, veggies and sauce together. chill. garnish with sesame seeds.
