Pink Beans In Tomato Sauce

Ingredients

- 1 (15 1/2 ounce) can pink beans
- 1 clove garlic, diced
- 1 carrot, diced
- 1 small potato, diced
- 1/2 green pepper, diced
- olive oil
- 1 -2 cup chicken stock
- 1 tablespoon oregano
- 1 (6 ounce) can tomato sauce or 1 (6 ounce) can tomato paste
Recipe
- 1 put a little olive oil in the bottom of a pot, enough to cover the bottom.
- 2 add the diced carrots, potatoes, garlic, and green peppers to the olive oil. add the oregano and sazon (optional) and stir until its barely lightly browned.
- 3 add the pink beans and tomato sauce while stirring. let simmer for a minute, then add the chicken stock. you want the chicken stock to cover everything in the pot and be about an inch or so above the ingredients in the pot.
- 4 let simmer for about 6-7 minutes or until the potatoes and carrots are cooked.
- 5 serve over rice!
