Pink Beans In Tomato Sauce

Ingredients

  • Servings: 4
  • 1 (15 1/2 ounce) can pink beans
  • 1 clove garlic, diced
  • 1 carrot, diced
  • 1 small potato, diced
  • 1/2 green pepper, diced
  • olive oil
  • 1 -2 cup chicken stock
  • 1 tablespoon oregano
  • 1 (6 ounce) can tomato sauce or 1 (6 ounce) can tomato paste

Recipe

  • 1 put a little olive oil in the bottom of a pot, enough to cover the bottom.
  • 2 add the diced carrots, potatoes, garlic, and green peppers to the olive oil. add the oregano and sazon (optional) and stir until its barely lightly browned.
  • 3 add the pink beans and tomato sauce while stirring. let simmer for a minute, then add the chicken stock. you want the chicken stock to cover everything in the pot and be about an inch or so above the ingredients in the pot.
  • 4 let simmer for about 6-7 minutes or until the potatoes and carrots are cooked.
  • 5 serve over rice!
