Minestrone Al La Lou

Ingredients
- Servings: 6
- 2 onions, chopped
- 1 courgette, diced
- 3 carrots, diced
- 2 garlic cloves
- 1 vegetable stock cube
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- 400 ml passata
- 2 teaspoons balsamic vinegar
- 2 teaspoons sugar
- 1 pinch salt
- 1/2 teaspoon ground pepper
- 50 g frozen peas
- 50 g spaghetti (broken into bits)
- 500 ml boiling water
- 2 tablespoons olive oil
- 28 g fresh basil, torn
Recipe
- 1 heat oil in pan add onions and sweat for 5 minutes add remianinbg vegetables and garlic and fry for a furtehr 5 minutes.
- 2 add all remaining ingredients and except the basil, bring to boil, turn heat down and simmer for 20 minutes.
- 3 tear basil and add just before serving.
