Low-salt Savoury Rice

Ingredients

- 3/4 cup rice, uncooked
- 2 tablespoons olive oil
- 1 tablespoon margarine
- 1 (400 g) can chopped tomatoes
- 1 garlic clove, crushed
- 1 onion, finely chopped
- 1 1/2 tablespoons green capsicum, finely chopped
- 1/4 teaspoon pepper
- 2 cups boiling water
Recipe
- 1 wash rice thoroughly and dry.
- 2 heat oil and margarine, brown rice lightly.
- 3 add vegetables and pepper, stir.
- 4 pour in water, stir.
- 5 turn stove down to simmer, and stir occasionally until all the liquid is absorbed.
