Low-salt Savoury Rice

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 3/4 cup rice, uncooked
  • 2 tablespoons olive oil
  • 1 tablespoon margarine
  • 1 (400 g) can chopped tomatoes
  • 1 garlic clove, crushed
  • 1 onion, finely chopped
  • 1 1/2 tablespoons green capsicum, finely chopped
  • 1/4 teaspoon pepper
  • 2 cups boiling water

Recipe

  • 1 wash rice thoroughly and dry.
  • 2 heat oil and margarine, brown rice lightly.
  • 3 add vegetables and pepper, stir.
  • 4 pour in water, stir.
  • 5 turn stove down to simmer, and stir occasionally until all the liquid is absorbed.
