Mexicali

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 cup uncooked rice
  • 2 cups v8 vegetable juice
  • 2 cups water
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 15 ounces black beans
  • 15 ounces corn
  • 1/2 cup salsa
  • 1/2 fresh tomato
  • tortilla chips

Recipe

  • 1 begin cooking 1 cup rice in 2 cups v-8 and 2 cups water with the chili powder and cumin.
  • 2 after 5 minutes add can of black beans.
