No Meat Lasagna Just For Aaron

Total Time: 2 hrs Preparation Time: 40 mins Cook Time: 1 hr 20 mins

Ingredients

  • Servings: 6
  • 9 lasagna noodles
  • 1 tablespoon butter
  • 1 tablespoon oil
  • 1 large onion, chopped
  • 1 green pepper, chopped
  • 1 yellow pepper, chopped
  • 6 garlic cloves, minced
  • 2 (28 ounce) cans diced tomatoes
  • 2 tablespoons basil, paste (or 1/2 c. packed fresh basil chopped)
  • 3 tablespoons tomato paste
  • salt and pepper, to taste
  • 6 cups shredded mozzarella cheese
  • 1 cup grated parmesan cheese

Recipe

  • 1 bring a large pot with salted water to a boil.
  • 2 add noodles, lower heat to low and cook for 12 minutes.
  • 3 drain.
  • 4 in large pot, heat butter/oil.
  • 5 add onions/peppers.
  • 6 saute until onions are tender.
  • 7 add garlic and heat until fragrant.
  • 8 add tomatoes, basil paste and bring to a boil.
  • 9 add tomato paste and stir to combine.
  • 10 lower heat to medium and simmer 20 minute.
  • 11 remove from heat.
  • 12 taste for seasonings.
  • 13 in the bottom of a 9x13 pan spoon some of the sauce.
  • 14 place 3 of the noodles over.
  • 15 spoon more sauce to cover.
  • 16 sprinkle 1/3 of mozzarella and parmesan over.
  • 17 repeat layers, ending with sauce and remaining cheese.
  • 18 bake in 375 degree oven covered with foil for 30 minutes.
  • 19 uncover and bake for an additional 30 minutes.
  • 20 remove and let stand for 20 minutes.
