No Meat Lasagna Just For Aaron

Ingredients
- Servings: 6
- 9 lasagna noodles
- 1 tablespoon butter
- 1 tablespoon oil
- 1 large onion, chopped
- 1 green pepper, chopped
- 1 yellow pepper, chopped
- 6 garlic cloves, minced
- 2 (28 ounce) cans diced tomatoes
- 2 tablespoons basil, paste (or 1/2 c. packed fresh basil chopped)
- 3 tablespoons tomato paste
- salt and pepper, to taste
- 6 cups shredded mozzarella cheese
- 1 cup grated parmesan cheese
Recipe
- 1 bring a large pot with salted water to a boil.
- 2 add noodles, lower heat to low and cook for 12 minutes.
- 3 drain.
- 4 in large pot, heat butter/oil.
- 5 add onions/peppers.
- 6 saute until onions are tender.
- 7 add garlic and heat until fragrant.
- 8 add tomatoes, basil paste and bring to a boil.
- 9 add tomato paste and stir to combine.
- 10 lower heat to medium and simmer 20 minute.
- 11 remove from heat.
- 12 taste for seasonings.
- 13 in the bottom of a 9x13 pan spoon some of the sauce.
- 14 place 3 of the noodles over.
- 15 spoon more sauce to cover.
- 16 sprinkle 1/3 of mozzarella and parmesan over.
- 17 repeat layers, ending with sauce and remaining cheese.
- 18 bake in 375 degree oven covered with foil for 30 minutes.
- 19 uncover and bake for an additional 30 minutes.
- 20 remove and let stand for 20 minutes.
