Mac 'n' Cheese With Bacon

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 4
  • 4 ounces breadcrumbs, fresh
  • olive oil
  • 2 tablespoons butter
  • 2 garlic cloves, finely chopped
  • 2 teaspoons mustard powder
  • 2 tablespoons flour
  • 2 cups milk
  • 8 ounces cheese, grated
  • 12 ounces rigatoni pasta (other short pasta can be used)
  • 8 slices streaky bacon, cooked until crisp

Recipe

  • 1 heat the oven to 400°f
  • 2 put the breadcrumbs on a baking sheet, drizzle with oil, season, and bake for 5 minutes.
  • 3 melt the butter in a pan.
  • 4 add the garlic and mustard and cook for 1 minute. add the flour and whisk on a low heat for 1 minute.
  • 5 gradually whisk in the milk, then bring to a boil, whisking. reduce heat and simmer until thick (about 4 minutes). stir in the cheese until melted.
  • 6 boil the pasta until al dente, drain and mix with the cheese sauce and bacon.
  • 7 spoon into 4 large ramekins. top each with breadcrumbs and bake for 20 minutes until golden.
