Leftover Rice Made Into Spanish Rice

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 3 cups cooked rice (leftover or brown)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 onion, diced
  • 4 minced garlic cloves
  • 1/2 cup tomato sauce (or more)
  • 1/4 cup water
  • 1/4 teaspoon coriander
  • salt and pepper

Recipe

  • 1 heat the oil and butter in a skillet over medium heat.
  • 2 saute onion until soft.
  • 3 add garlic and saute another minute.
  • 4 add the rice and saute a couple more minutes.
  • 5 add tomato sauce, water, and coriander.
  • 6 stir and bring to a simmer.
  • 7 reduce heat, cover, and simmer 15-20 minutes, stirring occasionally until the sauce is absorbed and the rice has lost most of its stickiness.
  • 8 salt and pepper to taste.
