Lemon Risotto

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1/4 cup minced onion
  • 1 lemon, zest of
  • 2 tablespoons olive oil
  • 1 1/2 cups arborio rice
  • 1 -1 1/2 cup chicken broth
  • 2 -4 tablespoons lemon juice
  • 1/2 cup grated parmesan cheese
  • salt and pepper

Recipe

  • 1 sauté onion and lemon zest in oil in large saucepan until onion is tender, 3-4 minutes.
  • 2 add rice; cook over medium heat, stirring constantly, 1-2 minutes.
  • 3 heat chicken broth to juice boiling in large saucepan; reduce heat and keep hot.
  • 4 add broth to rice, ½ cup at a time, stirring constantly until broth is absorbed before adding the next ½ cup.
  • 5 continue until the rice is al dente and creamy in texture, 20-25 minutes.
  • 6 stir in lemon juice and cheese; season to taste with salt and pepper.
