Ingredients

- 8 ounces linguine
- 1 yellow sweet pepper
- 4 cups broccoli florets
- 2 large tomatoes
- 1/2 teaspoon olive oil
- 1/2 cup plain fat-free yogurt
- 1/2 cup fat-free ricotta cheese
- 1/2 cup grated parmesan cheese
- 1/2 teaspoon pepper
Recipe
- 1 wash vegetables. cut yellow pepper into strips, tomatoes into 8 wedges each, and separate broccoli florets into bite-size pieces. saute in olive oil until tender, but still crisp.
- 2 cook pasta according to package directions for al dente; drain and keep hot. stir yogurt, cheeses, and pepper into vegetables. toss with hot pasta. serve immediately.
