Lowfat Pasta Alfredo

Ingredients

  • Servings: 4
  • 8 ounces linguine
  • 1 yellow sweet pepper
  • 4 cups broccoli florets
  • 2 large tomatoes
  • 1/2 teaspoon olive oil
  • 1/2 cup plain fat-free yogurt
  • 1/2 cup fat-free ricotta cheese
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon pepper

Recipe

  • 1 wash vegetables. cut yellow pepper into strips, tomatoes into 8 wedges each, and separate broccoli florets into bite-size pieces. saute in olive oil until tender, but still crisp.
  • 2 cook pasta according to package directions for al dente; drain and keep hot. stir yogurt, cheeses, and pepper into vegetables. toss with hot pasta. serve immediately.
