Middle Eastern Cannellini Patties

Ingredients

- 2 teaspoons olive oil
- 2 cups minced onions
- 2 garlic cloves, minced
- 1 teaspoon salt
- 1 cup minced bell pepper
- 2 teaspoons cumin
- 4 cups cooked beans
- 1 cup minced fresh parsley
- 2 cups cooked brown rice
- 1 tablespoon lemon juice
- black pepper
Recipe
- 1 sauté onions garlic and salt in the oil. add bell peppers and cumin and cook until peppers are softened. remove from heat and set aside.
- 2 mash the beans by hand in a large bowl. add the rice parsley and lemon juice and mix. add the sautéed veggies.
- 3 shape the mixture into small patties. fry in a pan coated with cooking spray until lightly browned on each side.
