- 1/4 cup onion, minced
- 9 -10 ounces cooked chicken breasts
- 1 cup chicken broth
- 14 ounces stewed tomatoes
- 1 1/2 cups quick-cooking rice
- parmesan cheese
Recipe
- 1 heat a large skiller coated with cooking spray over medium heat. cook onion for 2-3 minute or until softened. add chicken breast strips; stir and cook 2 minutes or until chicken is hot. stir in broth and tomatoes; bring to a boil. stir in rice; reduce heat to low. cover and simmer 5 minutes. remove from heat; let stand 3 minutes, covered. sprinkle with cheese and serve.
