Oven Baked Southern Lamb Loin

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 2 -2 1/2 lbs fresh lamb loin, bone in
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 2 tablespoons butter or 2 tablespoons margarine
  • 3 tablespoons tomato puree
  • 2 tablespoons cider vinegar
  • 2 tablespoons molasses

Recipe

  • 1 for basting sauce, saute onions and celery in the butter until soft.
  • 2 add tomato puree, vinegar and molasses. blend well.
  • 3 place meat on a roasting rack in pan. bruch with part of sauce.
  • 4 bake at 350 for about 1 1/2 hours or unti lamb is tender and juices run clear when periced with a fork.
