Lower Fat Honey-lemon Chicken Thighs

Total Time: 55 mins Preparation Time: 45 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 tablespoons lemon juice
  • 2 (14 ounce) cans chicken stock
  • 4 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 8 skinless chicken thighs
  • 1 medium onion (chopped)
  • 2 cups rice (uncooked)
  • 1/2 teaspoon pepper

Recipe

  • 1 mix the lemon juice, pepper,stock, honey and soy sauce.
  • 2 brown the chicken thighs in the oil.
  • 3 remove the thighs and add the onion.
  • 4 saute onion until soft.
  • 5 add the rice and broth mixture. place chicken thighs on top.
  • 6 cover and simmer 30 minutes or until the chicken is done and the liquid is absorbed.
