Linguini With Clam Sauce Ala Giro's

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1/4 cup olive oil
  • 2 tablespoons butter
  • 6 cloves crushed garlic
  • 1/4 cup finely chopped onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pinch oregano
  • 2 tablespoons chopped parsley
  • red pepper (to taste)
  • 4 -5 medium tomatoes, peeled,seeded and chopped
  • 1 lb chopped fresh clam
  • 2 cups clam juice
  • 1 lb linguine

Recipe

  • 1 saute' garlic and onions in the olive oil and butter.
  • 2 add salt, pepper, oregano, parsley, red pepper and tomatoes.
  • 3 simmer 10 minutes.
  • 4 add clams and clam juice to sauce.
  • 5 reheat, no not over-cook the clams.
  • 6 serve over hot linguini.
