Linguini With Clam Sauce Ala Giro's

Ingredients

- 1/4 cup olive oil
- 2 tablespoons butter
- 6 cloves crushed garlic
- 1/4 cup finely chopped onion
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 pinch oregano
- 2 tablespoons chopped parsley
- red pepper (to taste)
- 4 -5 medium tomatoes, peeled,seeded and chopped
- 1 lb chopped fresh clam
- 2 cups clam juice
- 1 lb linguine
Recipe
- 1 saute' garlic and onions in the olive oil and butter.
- 2 add salt, pepper, oregano, parsley, red pepper and tomatoes.
- 3 simmer 10 minutes.
- 4 add clams and clam juice to sauce.
- 5 reheat, no not over-cook the clams.
- 6 serve over hot linguini.
