Oven Baked Southern Lamb Loin

Ingredients

- 2 -2 1/2 lbs fresh lamb loin, bone in
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 2 tablespoons butter or 2 tablespoons margarine
- 3 tablespoons tomato puree
- 2 tablespoons cider vinegar
- 2 tablespoons molasses
Recipe
- 1 for basting sauce, saute onions and celery in the butter until soft.
- 2 add tomato puree, vinegar and molasses. blend well.
- 3 place meat on a roasting rack in pan. bruch with part of sauce.
- 4 bake at 350 for about 1 1/2 hours or unti lamb is tender and juices run clear when periced with a fork.
- 5 don't.
- 6 forget to brush the lamb with the sauce from time to time during cooking for best flavor.
- 7 cooking time depends on thickness of meat.
