No So Picky Picadillo

Total Time: 1 hr Preparation Time: 10 mins Cook Time: 50 mins

Ingredients

  • Servings: 8
  • 3 tablespoons vegetable oil
  • 2 lbs extra lean ground beef
  • 10 ounces carrots, sliced
  • 1 onion, diced
  • 4 tomatoes, diced
  • 3 ounces chipotle peppers, canned diced

Recipe

  • 1 add the vegetable oil and ground beef to a large sauce pan and cook until the meat is brown and tender.
  • 2 add carrots and cook another 5 minutes.
  • 3 add the onion and any seasonings and cook until the onions are translucent.
  • 4 add the tomatoes and chipotle peppers and cook for another 20 to 25 minutes.
  • 5 serve over rice or mashed potatoes.
