Mom's Turkey Soup

Total Time: 3 hrs 15 mins Preparation Time: 15 mins Cook Time: 3 hrs

Ingredients

  • Servings: 4
  • turkey carcass
  • left over turkey meat
  • 3 carrots
  • 3 celery ribs
  • 2 onions
  • 1 cup rice or 1 cup barley
  • 1 teaspoon italian seasoning
  • salt and pepper

Recipe

  • 1 put turkey carcass put in a large pot.
  • 2 take one carrot and one celery stalk and one onion cut in to large pieces put in the pot.
  • 3 add enough water to cover the carcass.
  • 4 bring to boil then turn it down to a simmer.
  • 5 cook for 2 hours.
  • 6 take the carcass and all the vegetables out of the stock.
  • 7 return stock to the pot.
  • 8 dice all the carrots, celery and onion put in pot.
  • 9 cook on low for 20 minutes.
  • 10 add the turkey meat and italian seasoning.
  • 11 add barley or rice (noodles).
  • 12 cook until the rice or barley is tender (according to the box).
  • 13 enjoy.
