Mom's Turkey Soup

Ingredients
- Servings: 4
- turkey carcass
- left over turkey meat
- 3 carrots
- 3 celery ribs
- 2 onions
- 1 cup rice or 1 cup barley
- 1 teaspoon italian seasoning
- salt and pepper
Recipe
- 1 put turkey carcass put in a large pot.
- 2 take one carrot and one celery stalk and one onion cut in to large pieces put in the pot.
- 3 add enough water to cover the carcass.
- 4 bring to boil then turn it down to a simmer.
- 5 cook for 2 hours.
- 6 take the carcass and all the vegetables out of the stock.
- 7 return stock to the pot.
- 8 dice all the carrots, celery and onion put in pot.
- 9 cook on low for 20 minutes.
- 10 add the turkey meat and italian seasoning.
- 11 add barley or rice (noodles).
- 12 cook until the rice or barley is tender (according to the box).
- 13 enjoy.
